Hi Kerry, On Rich's Phytochemistry and Medicine Making sheet it says that saponins are water soluble, so I'm puzzled that the answer is "water and glycerine" for the question about the solvent that does not dissolve or mix with "many saponins", among other things. Are some saponins water soluble and others not? thank you, Diana

This is because they are glycosides, so the triterpene part of the molecule is not very water soluble, but being a glycoside makes it so. In addition, generally what is water soluble is going to be fairly glycerin soluble, and vice versa, because they share a similar polarity. Glycerin is slightly less polar than water but not by much, so glycerin will pick up a bit more of less polar constituents, but not nearly as much as alcohol does, for example. Sorry for the delay!
