When you were talking about bromelain and referring to the pineapple, I have all my life experienced an irritating feeling in my mouth with raw more unripe pineapple, however, when it is cooked, grilled or more ripe, I do not experience this same sensation. I imagine that the process of fermentation of ripening with sugar content changing and cooking break something down that I then do not react to, do you know what this is that is present in the raw unripe pineappple that creates this sensation? Someone told me long ago that pineapples grown today have much less bromelain in them due to degradation of soils containing less bromelain. Thanks for sparking an interest in this aspect.
