In the Materia Medica for turmeric you indicate curcumin is unstable in acidic aqueous solutions as well as alkaline aqueous solutions. I have done a morning tonic for years using turmeric, ginger, black pepper and either ACV or lemon along with a small 1/2 tsp of honey and ghee or coconut oil but am now wondering if the acid portion is a problem and should be left out? There are also lots of drinks on the market combining turmeric and lemon or ACV so are they promoting a health benefit that is inaccurate if the curcumin is de-stabilized? But that led me to another question regarding the other components of turmeric that provide benefit that may not be de-activated the same way, or is it difficult to know, if they haven't been appropriately identified and tested like curcumin has been?
