Hello, Curious if you have ever worked with fresh isatis tinctoria root? All preparations and suggestions I have ever seen are with the dried root and sometimes leaf (also dried). I am getting to know this plant from growing it this season and I just harvested few pounds of it. The sweetness and flavor of the root was surprising and interesting to me but curious why I have not seen anyone work with it fresh yet.
