Elderberry Syrup question

Hello, I've started selling a couple of herbal products at local vending events to pay for tuition. I've discovered that two events a month will cover my monthly tuition here :). I have received a couple of feedback that my elderberry syrup is too sweet. I am using half honey to elderberry decoction. So if I make 16 oz of elderberry, I add 8 oz of honey for taste and preservation. Any ideas on how I can tone down the sweetness while still preserving the elderberry? Thank you in advance for any help.

Glycerin is less sweet than Honey, but 50% honey or 50% glycerin is just enough to preserve a syrup. Adding citric acid might help preserve it and add vitamin C as well. You need a certain level of sugars (Brix) to preserve things, minimum 50%.
