It is maybe more technically accurate to describe it "in food" rather than "as food" - basically using a powdered kudzu as a natural thickener, cooking slowly into sauces, stew, soups, etc. It is sometimes used as a natural thickener, like corn starch is used in cooking, but you get the therapeutic benefits of the kudzu as well. It is sometimes sold as "kuzu".
